Recipe: Black-Eyed Peas Revival

Ingredients

2 cups cooked black-eyed peas (or canned, rinsed and drained)

1/2 red onion, finely diced

1/2 red bell pepper, finely diced

1/2 orange bell pepper, finely diced

2 celery stalks, finely diced

1/4 cup chopped flat-leaf parsley

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 tablespoon honey (optional)

Hickory-smoked salt and cracked black pepper to taste

 

Instructions

1. In a large bowl, combine black-eyed peas, red onion, bell peppers, and celery.

2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, and honey until well combined.

3. Pour the dressing over the vegetable and pea mixture. Toss to coat evenly.

4. Season with hickory-smoked salt and cracked black pepper to taste.

5. Let sit for at least 30 minutes before serving to allow flavors to meld. Garnish with fresh parsley and serve chilled or at room temperature
